Beatrix will open their first restaurant in Florida at Disney Springs West Side. Beatrix, owned by Lettuce Entertain You Enterprises (a Chicago-based restaurant group), is your neighborhood restaurant, coffeehouse and grab-and-go market featuring healthy food options including vegetarian, gluten-free, and vegan along with fresh-squeezed juice cocktails. The restaurant will also offer a bakery and full-service bar with a selection of all-American beer and wine.
Executive Partner and Divisional President, Marc Jacobs, explains “Beatrix represents the way people are eating today – it’s that mix of health and comfort. Whether grabbing a cup of coffee and your favorite pastry, or having a cocktail, lunch, or dinner with friends, it’s your neighborhood meeting place.”
We looked at the dinner menus from the other restaurant locations in Chicago and it includes such items as:
ROASTED CAULIFLOWER SALAD - arugula, romaine & kale, prairie breeze cheddar, toasted pistachios, currants, pistachio vinaigrette
PRIME BURGER - whole grain toast or classic bun, kennebec fries, house-made giardiniera, choice of aged white cheddar, wisconsin swiss or havarti
VEGAN ASPARAGUS & PEA FARROTTO - sugar snap peas, roasted leeks, marsala broth, truffle oil
HOUSE-MADE RICOTTA RAVIOLI W/ HEIRLOOM TOMATOES - cherry on the vine tomato sauce, grana padano, basil
BURNT HONEY CHICKEN - roasted yukon gold potatoes, sautéed spinach, lemon
SKIRT STEAK CHIMICHURRI - kennebec fries, grilled shishito peppers
WAGYU POT ROAST FILET MIGNON - horseradish mashed potatoes, roasted baby carrots, steak jus
No opening date has been released yet but we can't wait to try it!
